This 22 inch pan serves 9 to 12. Top rim-to-rim dimensions: 21.5 inches. With handles: 28.5 inches. Can be used on the stovetop, grill or paella burner. Too large to fit in standard oven. Not for induction cooktops. Pan is slightly convex. The pan is made of carbon steel (aka polished steel, or acero pulido), which is ideal for paella since it conducts heat quickly and evenly. The handles are made of steel and painted red. The pan is thin but quite rigid and durable, with a hammered dimpled bottom. Carbon steel is the traditional material for paella, and some paella devotees feel that it enhances flavor. Compatible with Garcima paella burner models: G400, G600, G700, L40, L60, L70
